This tumbler with vacuum pump has a double chain transmission, adjustment of turning speed by means of electronic regulator and side access door. Is an advanced massage system for preparing ham and boild sholuder of ham, loins, ribs and macerated poultry products. Pulmax improves the absorption, retention and distribution of the brine and optimises the extraction of muscle protein. During stoppage times, air can be allowed to enter the tumbler in order to achieve the so-called 'lung effect' wich favorus the development of colour in the product and increases protein extraction.
