The SM-Pulmax mobile maceration drum is designed for small production runs and is available in 2 models: BMD-200 and BMD-400. This tumbler with vacuum or automatic (or manual) meat massager is especially indicated for the preparation of cooked ham or shoulder, loin, ribs and macerated poultry products. Through use, the absorption and retention of the brine is increased, improving its distribution while optimising the extraction of muscle protein. During stop times, air can be introduced into the drum to help achieve the “lung effect” that promotes the development of colour in the product and increases protein extraction.
